Place the cut chicken pieces in a bowl. Season with 3/4 teaspoon of salt and 1/2 teaspoon of crushed pepper. Combine well then let it marinate for 30 minutes.
Pour 4 tablespoons of oil into a pan over medium heat. Once hot, add chopped onions and fry for about 3 to 4 minutes until yellow in color or soft. Next, add the chopped green chilies and red chilies. Mix them and fry for 1 minute. Add the ginger paste and stir for 2 minutes until the raw smell is gone.
Add the marinated chicken pieces into the pan and mix well with the other ingredients. Fry them on medium heat for about 5 minutes or until browned.
Put the diced potatoes and chopped tomatoes into the pan and mix well. Season with 1/4 teaspoon of salt then mix it again. Place the lid on the pan and cook on low heat for about 3 minutes or until the tomatoes are soft.
Once the tomatoes are soft, pour the coconut milk and mix well. Place the lid back on and cook on low heat for another 15 minutes or until the chicken is soft. Once the chicken is tender, add a pinch of pepper and salt if needed, lemon juice, and coriander leaves. Mix all ingredients well then let it simmer for 1 or 2 minutes. Once done, turn off the heat then serve.
