Turn your favorite comfort food into this easy and delicious lasagna soup! This recipe by Mr. Make It Happen is a warm, cozy, and flavorful dish – perfect for the cold months. I have never tried anything like this before, and I can say that it’s truly incredible and worth the try.

Prepare the herbs. Remove stems from basil leaves. Stack them, roll them, and give a nice chop. Do the same with the parsley.
Make the ricotta mixture. In a bowl, add the whole-fat ricotta cheese and half a pack of Boursin garlic and herb cheese. Next, add 1/4 cup of grated parmesan cheese and 1/2 cup of mozzarella cheese, followed by some diced basil and parsley. Season with all-purpose seasoning and red pepper flakes. Mix everything until well combined. Place it in the refrigerator until the soup is ready to serve.
Place a Dutch oven or pot over high heat. Add some avocado oil and 2 lbs of ground beef. Do not break it up yet, cook until it gets a nice sear. Once it’s searing, break your beef into pieces and cook it through. Remove excess fat with a ladle.
Add the diced onion and cook for about 2 minutes. Next, add beef bouillon powder (optional), 1/2 tablespoon each of all-purpose seasoning (or salt, pepper, garlic powder), red pepper flakes, Italian herb paste, and tomato paste. Mix everything to combine for about 2 to 5 minutes.
Mix in the garlic. Next, add 4 cups of beef broth and deglaze the bottom. Let it simmer for about 10 minutes.
Add 1 can of crushed tomatoes and 28 oz of tomato sauce. Stir well.
Add the rest of your basil, parsley, and a pinch of sugar. Mix well then taste as you go. Adjust seasonings if needed.
Get your lasagna noodles, break them into 3 portions, and add to the pot. Mix, then cover with the lid. Cook until the noodles are al dente for about 20 minutes.
Serve with the ricotta mixture and enjoy!
