Start by seasoning the chicken breast generously with cajun seasoning and all-purpose seasoning.
Preheat your oven to 400 degrees and cook your noodles based on the package instructions.
Place a skillet over heat and add a little bit of cooking oil. Once hot, add the chicken breast and sear for 60 seconds per side, then place in the 400-degree oven and bake for about 15 minutes or until the chicken is 165 degrees internal temperature.
While the chicken is cooking, make the alfredo sauce. Add some butter to a skillet, followed by the sausage. Cook until well browned, then remove using a slotted spoon. Next, add the diced shallot and cook for about 2 minutes. Add 2 tablespoons of butter, and garlic paste. Saute for a few minutes, then add 2 tablespoons of flour. Cook for 2 minutes.
Add the heavy cream and half and half to the mixture. Bring it to a boil. Once boiling, reduce to a simmer. Add the spinach and stir until well combined. Turn the heat to low and then add the shredded cheese. Add seasonings and sausage. Chop the chicken and add to the sauce as well.
Mix all ingredients until well combined, then transfer to a casserole dish. Top it with mozzarella cheese and bake at 350F for about 20 minutes.
Sprinkle chopped parsley on top, then serve. Enjoy!
