I’m not totally what you can call a picky eater, but there are some vegetables that I want to cook a certain way because I think they would be more delicious. One example of a vegetable I can’t eat a lot that much is carrots, but when baked, roasted, or fried, I can eat a whole serving in just one sitting.

One of my favorite ways to cook carrots is by incorporating them with potatoes and then turning them into fritters which you can learn in this recipe by Cookist Wow on YouTube. They are so crispy, light, and savory that you can’t stop at just one bite, this makes it the perfect dish to munch on for snack time or while you’re watching your favorite game or TV show.
Step 1
Clean and peel off the skin of the potatoes, then cut them into small pieces, and place them in a pot of boiling water. Cook them for a couple of minutes until fork tender, then remove them from the pot, and set them aside.
Step 2
Cook the carrots until fork tender, then remove them, and drain off the water. Chop the green onions, then mash the potatoes and carrots, and mix everything until fully combined.
Step 3
Transfer the mixture to a piping bag, then preheat the oil making sure it’s enough for deep frying, and once hot, squeeze the mixture directly into the oil cutting it into small bite-sized pieces.
Step 4
Cook them in batches until nice and crispy, then place them on a plate lined with a paper towel, and continue to cook the rest of the mixture. Serve with your favorite dipping sauce on the side and enjoy!
