Celebrate Easter by serving these colorful and delicious deviled eggs by Mesha’s Corner on YouTube and surely it will be a gathering that you and your family will never forget. These deviled eggs are super easy to prepare and you can also make this ahead of the event, too, if you want a really vibrant color to set. This is the perfect dish to serve at the party or gathering that you’re hosting, and you can also modify the ingredients so that the kids can get a taste of this yummy appetizer, too.

Ingredients:

  • 8 eggs
  • 4 tbsp mayonnaise, or more if preferred
  • 1 tbsp spicy Dijon mustard
  • 2 tbsp sweet relish
  • 2 tbsp pickle banana peppers, or more if preferred
  • 2 tbsp scallion, chopped
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • 1 tbsp hot sauce
  • Salt and pepper, to taste
  • Crispy jalapeño, for garnish
  • Freshly chopped parsley, for garnish
  • Food coloring, about 4 drops for every 1½ cups of water or as needed if you want a vibrant color

Directions:

Step 1

Place the eggs in a pot, then fill it with water, and place it on a stove over medium-high heat. Bring it to a boil, then once bubbly, cover the pot, and allow it to boil for a few more minutes. Drain all of the water from the pot, then after 10 to 12 minutes, give the eggs a bath with cool water, and peel off the skin. Place the eggs on the counter lined with a paper towel to prevent them from moving, then gently slice them in half lengthwise neatly and nicely, and remove the yolks transferring them to separate bowls.

Step 2

In the bowl of the egg yolks, add the chopped scallions, sweet relish or pickles, pickle banana peppers, spicy Dijon mustard, mayonnaise, salt, and pepper, then mix and mash them all together until well combined, add the hot sauce, and continue to mix until incorporated and smooth. Prepare 3 bowls filled with water, then add a few drops of different food coloring in each water, and stir them well until uniform and incorporated.

Step 3

Drop the egg whites in each food coloring and water mixture, then allow them to soak for about 45 minutes, and place them on a rack placed on top of a large container or bowl to catch any drippings. Let the eggs dry completely, then transfer the egg yolk mixture to a piping bag or a Ziploc bag and trim the ends, and start piping the yolk mixture on each colored egg white. Brush them with some melted butter, then top them each with crispy jalapeno, and garnish with freshly chopped parsley.
