Almond joy is one of my absolute favorites and I love incorporating them into delicious dessert recipes. One of my go-to treats to make is this yummy cake by Catherine’s Plates on YouTube that uses only a few simple ingredients and can be ready in just a few minutes. Share this cake with your family or friends and they’ll love this for sure. Plus, you can serve this cake at holidays or parties, too.

Ingredients:

  • 1½ cups sweetened shredded coconut, divided
  • 1 cup almonds, chopped
  • 1 box chocolate fudge cake + ingredients listed at the box
  • 1 package cream cheese, softened
  • 1 cup butter, softened
  • ½ tsp almond extract
  • 2 cups powdered sugar
  • 1½ cups semi-sweet chocolate chips

Directions:

Step 1

Preheat your oven to 350°F, then grease a 9×13-inch baking dish with nonstick cooking spray, and set it aside. Sprinkle half of the shredded coconut all over the bottom of the dish, then sprinkle chopped almonds, and set it aside. In a large mixing bowl, add the cake mix and the ingredients listed at the back of the box, then prepare the cake according to the package instructions, and pour the cake batter onto the prepared baking dish spreading it nicely and evenly.

Step 2

Beat together the cream cheese, butter, and almond extract in a mixing bowl until creamy, then incorporate the sugar one cup at a time until well combined. Add the remaining shredded coconut, then fold them together until incorporated, and dollop the mixture all over the cake batter. Using a knife, swirl the mixture through the cake, then sprinkle some chocolate chips at the top, and let it bake in the preheated oven for about 45 to 50 minutes or until a toothpick inserted at the center comes out clean. Let it cool down to room temperature, then serve, and enjoy!
