This is super convenient to make because you only need a few simple ingredients that you may already have at home, plus, if you have a lot of blueberries that you’ve grown and harvested at home, then this is the perfect recipe to use them with.

Ingredients for Air Fryer Blueberry Lemon Cake:

  • 1 cup of all-purpose flour
  • eggs
  • 5 tbsp of vegetable oil or melted butter
  • 7 tbsp of sugar
  • 1 tbsp of baking powder
  • 1 tbsp of vanilla extract
  • 1 tbsp of lemon juice
  • 1 cup of fresh blueberries
  • 5 tbsp of whole milk
  • ¼ tsp of salt, or to taste

Step 1

In a large mixing bowl, add the eggs, sugar, and vegetable oil or melted butter, then whisk or beat them with a handheld mixer until combined, scrape the sides with a spatula, and give the mixture a quick fold. Add the vanilla extract and fresh lemon juice, then beat them again, and scrape the sides before giving them a quick mix.

Step 2

Sift together the flour, baking powder, and salt over the egg mixture, then scrape the sides, pour in the milk, and fold until well-mixed. Continue to beat until combined, then coat the blueberries with flour, and add them to the mixture.

Step 3

Gently fold them until evenly distributed, then set the mixture aside, and preheat your air fryer to 350°F or 170°C for about 5 minutes. Grease a 7-inch baking pan with oil on the bottom and sides, then line the bottom with parchment paper, and brush more oil on top.

Step 4

Pour the batter onto the pan, then tap it lightly to release the air bubbles, and place the pan on the air fryer basket. Cook the cake for about 45 minutes or until a toothpick inserted at the center comes out clean, then let it cool completely, and serve. Enjoy!
