Ingredients:

  • 4 & 1/3 cups of bread flour (or unbleached all-purpose flour)
  • 1 package of active dry yeast (or rapid rise yeast)
  • 1/2 tbsp fine sea salt (or kosher salt)
  • 2 cups of warm water
  • 3 tbsp of olive oil (for greasing the skillet)

Directions:

Step 1

In a large mixing bowl, add 4 & 1/3 cups of bread flour, 1 package of active dry yeast, 1/2 tbsp fine sea salt, and 1/2 tbsp of fresh rosemary (optional.) Whisk it all together to combine. After combining, add 2 cups of warm water. Once water is added, stir it all together until everything is well combined. After mixing, cover the dough and let it rise at room temperature until it is double in size. (It will take about 45 minutes.)

Step 2

Once your dough has risen, drizzle about 1 tbsp of oil into a cast-iron skillet, then drizzle a tablespoon of olive oil over the top of the dough and little to your hands. Gently pull the dough away from the sides of the bowl and gather it all up into your hands. It’s going to be very sticky and loose but do your best to sort of form it into one ball and then place it right into your skillet. Cover the skillet and let it rise again for 30 minutes. At this point, go ahead and preheat your oven to 400 degrees F. Once you’re ready to bake it, gently make some cuts over the top of the dough using kitchen scissors, then place them in the preheated oven and bake for about 35 minutes. After 35 minutes, remove it from the oven and allow it to cool for about an hour before slicing.
