In a bowl of a stand mixer or a large bowl for a hand mixer, cream one-half cup of butter. Next, add one-third of a cup of powdered sugar and mix on low for about 2 minutes. While mixing, zest one large lemon until you have 1 teaspoon. Add it to the mixture then mix until just combined.
Next, add one cup of all-purpose flour and mix on low for about 1 minute until the dough comes together. Sprinkle some flour on your work surface and form the dough into a disk. Lightly flour the top. Flatten the cookie dough using a rolling pin until it’s a quarter inch thick.
Cut the dough using a three-inch round cutter. Reroll the scraps to make some more.
Line a baking sheet with parchment paper then place the cookies. Place in the oven and bake at 350 degrees F or 175 degrees C for 10 to 12 minutes. Allow it to cool in the pan for a few minutes then transfer it to a cooling rack and allow them to cool completely.
For the icing. In a small bowl, juice one-half lemon. You will need 2 tablespoons. Combine it with 1 cup of powdered sugar. Whisk them together until it’s smooth. If the mixture is too thick, add more lemon juice.
Dip the cookies into the lemon icing and allow it to set for 2 hours. Once done, place on a plate then serve. Enjoy!
