You can never go wrong with a comforting, warm, and delicious tomato soup on a cold day. It’s fresh and rich in flavors, perfect for fall or winter. Cut the butter into small slices, then cut the onion into quarters.
Open the large can of tomatoes. Place a saucepan over heat. Add the 1/4 cup of butter and let it melt. Once melted, add the sliced onion and the can of tomatoes.
Add a bit of water to thin the sauce a little bit then add some salt so it’s well seasoned. You can add more seasonings if you want. Give it a stir and gently break the tomato into a couple of pieces using a wooden spoon.
Let the soup cook at a low simmer for about 40 minutes.
After 40 minutes, transfer the soup to your blender or you can just use a hand mixer. If you are going to use a blender, cover it with the lid, but don’t add the stopper. Instead, rest a dishtowel on top and cover it with your hand. The soup is still hot, so if you did not do this, it would spill everywhere. Blend until smooth.
Scoop some into a bowl then serve with grilled cheese. Enjoy!
