Step 1
Bring a pot of water to a boil, then add some salt, and cook the egg noodles until al dente. Drain off all the water, then rinse under cold water, and toss with some olive oil. Place a skillet on a stove over medium heat, then cook the ground beef until nice and brown, and drain off any excess grease. Add the onion and garlic, then give them a good mix, and cook for about 3 minutes or until softened and fragrant.
Step 2
Pour in the tomato sauce and diced tomatoes, then add the Worcestershire sauce, smoked paprika, red pepper flakes, salt, and pepper, and give them a good stir to combine. Bring it to a simmer for about 5 minutes until thickened, then turn off the heat, and set the mixture aside. In a large mixing bowl, add the sour cream, cottage cheese, and parmesan cheese, then add the cooked egg noodles, and stir until everything is evenly coated.
Step 3
Spread half of the mixture to the bottom of a greased baking dish, then add a layer of half of the beef mixture, and sprinkle half of the shredded cheddar cheese on top. Repeat the layers with the remaining ingredients, then preheat your oven to 350°F, and bake the casserole dish uncovered for about 25 to 30 minutes or until the cheese is melted and bubbly. Garnish with fresh parsley, then serve and enjoy!
