Growing up in the South, I drank A lot of Dr. Pepper, so nothing feels as comforting as that beautiful brown effervescent sparkling beverage to quench my thirst and really make me feel at home. When I had to come up with a new cupcake recipe for my Daughter’s school Meet and Greet for Parents and Teachers, I searched Youtube frantically in an effort to find something new and exciting that was both visually appealing and delicious to impress the school staff and give the family some awesome leftovers.

The recipe I found was really simple with straightforward no-nonsense instructions. I made sure to get a bottle of pure cane Dr. Pepper in a bottle, you definitely do not want to scrimp here, because that makes the cupcakes really tasty and much more healthy. I found some old-world paper straws and Dr. Pepper Gummies at HEB for my garnishes. I let the kids help with the cake cooking, icing and decorating. This project was outstanding for a group atmosphere, everyone got to do their part and contribute but it wasn’t so complicated that things could go wrong.

When my Daughter walked the tray of cupcakes into the Parent Teacher Meet and Greet, she was beaming with excitement, everyone loved them so much and took lots of photos, and we did not get those leftovers we were counting on because there wasn’t one crumb left. I highly recommend these, they are such fun and really gorgeous.

How to Make Dr. Pepper Cupcakes

INGREDIENTS:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 3/4 cup brown sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 (12 ounce) bottle Dr. Pepper Made With Cane Sugar
  • 1 cup unsalted butter
  • 1/4 cup unsweetened cocoa powder
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract

For Icing:

  • 1/2 cup butter
  • 5 cups powdered sugar
  • 1/2 cup cream cheese
  • 5 tablespoons of Dr. Pepper
  • 1 tablespoon of Maraschino cherry juice

Garnishes:

  • Maraschino cherries
  • Dr. Pepper gummy candies

 

Directions:

To make cupcakes: Preheat the oven to 350°F and line a cupcake tin with wrappers. Into a large bowl, whisk together the flour, sugars, baking soda, and salt. Set aside. In a small saucepan over medium-high heat, add Dr. Pepper, butter, and cocoa powder. Cook for a couple of minutes until a boil starts to form. Pour into the flour mixture. In a small bowl, whisk together the eggs, buttermilk, and vanilla until blended. Add to batter and mix. Pour into cupcake liners 3/4 of the way full and bake for 20 minutes or until a toothpick enters comes out clean. To make the icing: Into a medium-sized bowl, whip butter until light and fluffy. Beat in sugar, followed by cream cheese. Then slowly beat in Dr. Pepper and cherry juice. To assemble: Frost cupcakes and garnish with Dr. Pepper or Cola gummy, Maraschino cherry, and a small straw.
