In a medium saucepan over low heat, add 1/2 cup whole milk, 1/2 cup water, and 1/4 cup bread flour. Whisk together until you form a paste consistency. Set aside. Next, combine 1 cup of warm water, 2 tsp active dry yeast, and 2 tsp sugar. Whisk together and leave it for ten minutes until foamy. In your stand mixer’s bowl, add 4 1/2 cups bread flour, 2 tsp kosher salt, and 2 tsp sugar. Mix on low speed, then add the egg + 1 yolk, the yeast mixture, the milk mixture from earlier, and 1/4 cup unsalted butter. Continue to mix on low for ten minutes.
Next, oil a large mixing bowl, then transfer the dough onto it. Cover with plastic wrap and proof for 1 hour and 3o minutes, until double in size. Once done, punch out the gas and divide the dough into 18 equal pieces. Form each piece into a ball, then put them in a butter-greased baking dish. After this, cover them and proof for one hour. Brush the buns with eggwash, then place in the preheated 375 degrees F oven and bake for 2o minutes or until the top is lightly golden. After baking, brush the top with some melted unsalted butter while still hot, then sprinkle some flaky salt on top.
