What’s a better way to welcome the warmer season than to make this delicious peach cobbler pudding by Kimmy’s Kreations? It was my first time making homemade pudding – it turned out fantastic! Each layer has its own texture and taste. In just one scoop, I am sure you’ll get hooked. The peaches, whipped cream, pudding, and crushed biscuits all complement each other so well.

Ingredients:

Pudding:

  • 4 egg yolks
  • 3.5 cups of whole milk
  • 1 cup of granulated sugar
  • 1 cup of brown sugar
  • 1 teaspoon of vanilla extract or vanilla bean gel
  • 3 tablespoons of cornstarch

Peaches:

  • 3 cans of peaches (leave the juice of one can)
  • 1 cup of brown sugar
  • 1/2 cup of white sugar
  • 2 teaspoons of vanilla bean gel
  • 2 teaspoons of ground cinnamon
  • 1/2 teaspoon of nutmeg

Whipped topping:

  • 3 cups of heavy cream
  • 1 teaspoon of vanilla bean gel or extract
  • 1 cup of powdered sugar

Others:

2 packs of caramelized cookies

 

Note: you can adjust the amount of sugar based on your preference

Instructions:

Step 1:

In a saucepan, add the peaches and the juice of one can. Next, add 2 teaspoons of vanilla bean gel, 1/2 teaspoon of nutmeg, 2 teaspoons of ground cinnamon, 1 cup of brown sugar, and 1/2 cup of white sugar. Mix everything until well combined. Cook for about 5 to 10 minutes until the peaches are soft. Once done, transfer them to a bowl and let them cool for at least 3 hours.

Step 2:

Separate the yolks from the whites in two different bowls. Add 3.5 cups of whole milk into a bowl with the yolks. Next, add 1 cup of granulated sugar, 1 cup of brown sugar, 1 teaspoon of vanilla extract or vanilla bean gel, and 3 tablespoons of cornstarch. Whisk everything until well combined.

Step 3:

To a large non-stick saucepan over low heat, slowly add the milk mixture and stir continuously until it becomes thick. Transfer to a large container and place on the fridge for at least 3 hours.

Step 4:

In a large bowl, add 3 cups of heavy cream and whisk. Add the vanilla bean extract and 1 cup of powdered sugar to the bowl. Whisk until it’s thick.

Step 5:

Place the caramelized cookies in a zip lock and crush them using a rolling pin until it becomes crumbs.

Step 6:

In a container or glass, add a layer of pudding, then the peaches. Top it with the whipped cream and spread it evenly. Next, sprinkle the crushed cookies and repeat the layers one more time. Add more peaches on top if preferred.

Step 7:

Place in the fridge for a few hours to let it cool. Serve and enjoy!
