Slice the pork neck into desired thickness. Season both sides with salt and black pepper and rub them into the pork.
Add 2 tablespoons of oil to a pan. Once the oil is hot, add the seasoned pork slices. Cook each side for 6 minutes until browned. Remove from the pan and cook the remaining pork slices.
In the same pan, add the chopped onions and cook them for about 5 minutes until softened. Next, add 3.5 tablespoons of butter and the minced garlic and mix. Add 1/3 teaspoon of salt and black pepper, 1 teaspoon of thyme, 2 tablespoons of Dijon mustard, and 2 tablespoons of soy sauce into the pan. Mix until well combined.
After that, add 1 tablespoon of soy sauce and mix again. Pour the water and stir well. Next, add the sliced cucumbers, bay leaves, and sliced pork back. Cover with the lid and cook for 120 minutes. Once done, remove the bay leaves and garnish with parsley. Serve it on a plate with mashed potato. Enjoy!
