Ingredients:

  • 10 to 12 pieces of chicken winglets (cut the meat from the bone and push down to create a lollipop shape)

For the first marinade:

  • 1 teaspoon of soy sauce
  • 1.5 teaspoon of white vinegar
  • 1 teaspoon of chili powder
  • 2 teaspoons of ginger garlic paste
  • 1/4 teaspoon of black pepper powder
  • 1/2 teaspoon of salt

For the second marinade:

  • 1/4 cup of cornflour
  • 3 tablespoons of all-purpose flour
  • 1 egg
  • 1.5 teaspoons of chili powder
  • a pinch of salt

Other ingredients:

  • 1 tablespoon of ginger (finely chopped)
  • 1 tablespoon of garlic (finely chopped)
  • 3 tablespoons of onion (finely chopped)
  • 2 tablespoons of spring onion greens (chopped)
  • 3 tablespoons of chili garlic paste
  • 1 teaspoon of soy sauce
  • 2 tablespoons of tomato ketchup
  • 1 teaspoon of sugar
  • 1 teaspoon of white vinegar
  • cornflour slurry (mix 3/4 teaspoon of cornflour with 4 tablespoons of water)

Instructions:

Step 1:

Clean chicken winglets then shape them into lollipops. Place them in a bowl and add all ingredients for the first marinade. Mix everything well, then set it aside for 30 minutes.

Step 2:

Add ingredients for the second marinade to the chicken and mix well. Set it aside.

Step 3:

Place a pan or skillet over heat and add a generous amount of oil. Once the oil is hot, drop the chicken lollipops one by one to not overcrowd the pan. Do not move the chicken for about 2 minutes, then keep stirring to give it a uniform golden brown color. Keep frying for 4 to 5 minutes more until cooked through.

Step 4:

Remove the chicken from the pan and repeat for the remaining batches.

Step 5:

Heat oil into a wok or pan. Add chopped ginger and garlic, then saute for about 15 seconds. Next, add chopped onions and saute on high heat for a minute until the onions are soft.

Step 6:

Add the chili garlic sauce and mix, followed by the soy sauce. Mix again then add the tomato ketchup, sugar, and vinegar. Combine everything well, then cook on medium heat for a minute until the sauce is smooth.

Step 7:

Add the corn slurry, mix, and cook for another 30 seconds until the sauce is thick and smooth.

Step 8:

Add the lollipops you fried earlier and stir fry for a minute until everything is well coated. Garnish with chopped spring onions, mix, and serve. Enjoy while hot.
