Preheat the oven to 400 degrees Fahrenheit.
Slice the cherry tomatoes in half, and place in a bowl. Add the minced garlic, thinly sliced onions, and 2 tablespoons of onion. Toss them together until coated well.
Transfer the vegetable mixture to a sheet pan and evenly spread it out. Cook in the oven for about 15 to 20 minutes or until the tomatoes start to blister. Roasting the veggies will make them soft and sweet.
Crack 14 large eggs in a bowl and beat until lightly frothy, then set aside.
Put the thinly sliced zucchini, 2 cups of baby arugula, a quarter cup of crumbled feta cheese, 1/2 teaspoon of kosher salt, and a pinch of freshly ground black pepper into the beaten eggs. Mix until well combined.
Remove the veggies from the oven and stir. Pour the egg and veggie mixture on top. Use a spoon or spatula to spread the veggies as much as possible throughout the pan.
Place it back in the oven. Reduce the temperature to 350 degrees Fahrenheit and cook for about 20 minutes or until cooked through.
Slice the eggs into squares and serve. Enjoy!
