Peel the 3 potatoes and soak them in cold water in a bowl. This will remove some of the starch and makes them crispier.
Remove the potatoes from the bowl and slice them into big chunks. Place them in a pot and fill them with water. Add some salt and let them boil for 15 minutes or until soft. Once done, strain them.
Mash the potatoes with a fork, then push them through a sieve using s spoon or spatula.
Finely chop the fresh parsley and grate the mozzarella cheese. Add them to the mashed potatoes, then season with 1 teaspoon of dried garlic and powdered pepper. Adjust the spiciness based on your preference. Mix them together using a spoon until well combined.
Add 5 tablespoons of potato starch to the mixture. Mix until well incorporated. You can use your hands to properly mix the mashed potatoes.
Flour your workspace. Separate the mixture into 2 parts. Get 1 of the part and flatten using a rolling pin. Sprinkle more flour on top and trim the edges of the dough (add them to the remaining mashed potatoes). Next, cut the dough into thin slices, then transfer it to a plate. Do the same for the remaining mashed potatoes.
Add a generous amount of oil to a pan. Once the oil is heated, add the sliced potato sticks. Fry them until brown and crispy on all sides. Once done, place on a strainer to remove excess oil. Serve and enjoy!
