Ingredients:

  • breadcrumbs
  • 8 oz shredded cheddar cheese
  • 1 lb ground beef
  • 1 -10 oz can of Rotel
  • 1 block of cream cheese, diced
  • 1 – 8 oz Velveeta, diced
  • white onions, chopped (optional)
  • jalapeno, chopped (optional)
  • 1 packet of taco seasoning
  • 2 eggs
  • flour

Directions:

Step 1

Heat a little bit of oil in a large skillet and saute the white onion. Once the onion softened, add the ground beef and cook until browned. Next, drain the excess grease and season the meat with one packet of taco seasoning. Mix well. After cooking, transfer the ground beef to a microwaveable bowl with the diced cream cheese, cheddar cheese, chopped jalapeno, and one can of Rotel. Put the bowl in the microwave for about a minute or two. Stir in 8 oz shredded cheddar cheese. Mix them well together, then refrigerate for about 30 minutes.

Step 2

After refrigerating, take some of the mixture, form it into a ball, and place it in a casserole dish. Repeat this until you have finished all the mixture. Once done, put them in a freezer for about an hour. In the meantime, prepare the coating. Beat two eggs in the first bowl, put some flour on the second flour, and some breadcrumbs in the third bowl. Season the flour with some chili powder and cajun seasoning.

Step 3

Now, dip one ball into the flour first, then into the beaten eggs, and lastly into the breadcrumbs. Repeat these with all of the cheese balls. After this, store them in the fridge while you preheat your oil. Once your oil is hot, gently drop the cheese balls and deep fry them for about 45 seconds or until they’re crispy.
