Materials:

  • 6 medium-sized tomatoes
  • 1 shallot, optional but will taste nicer
  • 2 cloves of garlic
  • 6 sprigs of fresh thyme
  • 1 large handful of fresh parsley
  • ½ cup of bread crumbs
  • ¼ cup of olive oil
  • ½ cup of grated Parmesan cheese
  • Salt and pepper, to taste

Directions:

Step 1

Preheat your oven to 350°F or 180°C, then wash the tomatoes and start removing the core of each. Cut the tomatoes in half and remove their seeds by scooping them out with a spoon or melon baller, then lay them on a baking sheet lined with Silpat in a single layer, and sprinkle some salt on them. Peel and finely chop the shallot and add them to a mixing bowl, then add the minced or grated garlic cloves. Remove the leaves of the thyme from its stem, then chop them finely, and add them to the bowl. Now, chop some parsley, then add it to the bowl as well.

Step 2

Add the breadcrumbs to the mixing bowl, then add about ¾ cup of grated cheese, and season them with salt and pepper. Lastly, drizzle some olive oil and mix them all together until the ingredients are well combined. Scoop this mixture using a spoon and fill each tomato packing them firmly before topping them with more grated parmesan cheese. Place them in the preheated oven and let them bake at 350°F or 180°C for about 25 minutes. Let it rest for about 5 to 10 minutes before serving.
