Ingredients:

  • 2 lb ground beef
  • 2 celery stalks, diced small
  • 2 cups frozen peppers and onions
  • 2 (15 oz) cans tomato sauce
  • 2 (14.5 oz) cans stewed tomatoes
  • 16 oz can dark red kidney beans, undrained
  • 15 oz can chili beans in sauce, undrained
  • 10 oz can diced tomatoes and green chilies, undrained
  • 1 cup low-sodium beef broth
  • 1.25 oz packet of chili seasoning
  • 1 tbsp granulated sugar
  • 1 tbsp white vinegar
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp ground black pepper
  • 1 tsp kosher salt

Directions:

Step 1

Heat a large skillet over medium heat, then add the ground beef. Break and cook it until browned, then drain the excess liquid. After this, transfer the meat to the slow cooker. Add the chopped celery, 2 cups frozen peppers and onions, 2 cans of tomato sauce, 2 cans of stewed tomatoes, 1 can of dark red kidney beans, 1 can of chili beans, 1 can of diced tomatoes and green chilies, and 1 cup low-sodium beef broth. Season with a 1.25 oz packet of chili seasoning, 1 tbsp granulated sugar, 1 tbsp white vinegar, 2 tsp garlic powder, 2 tsp onion powder, 1 tsp ground black pepper, and 1 tsp kosher salt. Mix well.

Step 2

Cover the slow cooker with its lid, set it on low, and cook for six to eight hours (or on high for four to five hours.) Once done cooking, transfer to a serving bowl and top it with some shredded cheese, sour cream, and crushed saltine crackers. Serve and enjoy!
