I have high standards when it comes to soups. I crave going home during the rainy season, from a tiring day with mom, ready for her heart-warming soup. When I tell you that this creamy crockpot red beans recipe by Coop Can Cook will do the trick, you just have to trust me.  

Ingredients:

  • 1 lb dry red beans
  • 1 lb sausage coined
  • 1 diced onion
  • 1 diced bell pepper
  • 2 celery stalks diced
  • 5 cups of water
  • 1 tbsp onion powder
  • 2 tsp garlic powder
  • 2 chicken bouillon cubes
  • 5 tbsp butter
  • Cajun seasoning and black pepper to taste

Directions:

Prepare all the needed ingredients.

To prepare the beans, sort out the bad ones and rinse well.  All sorted and cleaned out, add the beans to a large pot and pour in about 2 inches of water.

Bring the pot to a boil and let it boil for 5 minutes before turning off the heat. Set the beans aside to let them soak in the pot for 20–25 minutes. When done, drain the water off the beans and set them aside. Add 1 lb of coined sausage to a heated pan and cook until brown. Then, remove the sausages, leaving the sausage drippings in the pan. Set aside.

In the heated pan with the sausage drips, add 1 diced onion, 1 diced bell pepper, and 1 diced celery stalk. Sauté for 3 mins.

Grease the crockpot with nonstick cooking spray.

Add in the cooked red beans, cooked sausages, sautéed vegetables, 5 cups of water, 2 chicken bouillon cubes, and 1 tbsp of onion powder. Stir all the ingredients together until well combined. Cover the pot with a tight lid and cook for 4 hours on high heat.

After 4 hours, give the soup a good stir. Add in 5 tbsp of butter and season with Cajun and black pepper to taste. Place the lid back on and continue cooking for an hour on high heat.

After an hour, remove the lid and continue cooking on high for another hour without the lid.

Serve hot, or over warm rice, and enjoy!
