Ingredients:

  • 4 cups of uncooked long-grain rice
  • 1 lb dried red kidney beans
  • 1/2 lb smoked sausage, sliced then halved
  • 1 green bell pepper, finely diced
  • 2 celery ribs, finely chopped
  • 2 garlic cloves, minced
  • 1 medium onion, finely diced
  • 1 tbsp Worcestershire sauce
  • 6 cups chicken broth
  • 1/2 tsp kosher salt
  • 1/4 tsp chili powder
  • chopped green onions, for garnish
  • chopped parsley, for garnish

Directions:

Step 1

To start, add the red kidney beans to the crockpot followed by 2  finely chopped celery ribs, 1 finely diced medium onion, and the sliced sausage. Next, pour 6 cups of chicken broth and 1 tbsp Worcestershire sauce. Finally, season with 1/2 tsp kosher salt and 1/4 tsp chili powder, then mix everything together to combine.

Step 2

Once everything is combined, cover the crockpot with its lid and set it to high for six hours. While waiting, cook your rice according to the package instructions. After the red kidney beans are done cooking, serve it over the cooked rice.
