The easiest way to warm up in a cold season is to make warm soup. It is really effective in keeping our stomach full and our body fighting off the chilly and windy season. One of the best soup recipes out there is this crockpot pizza soup by Catherine’s Plates via YouTube. It is very easy to prepare, delicious and is also low-carb.

Ingredients:

  • 1 pound jimmy dean breakfast sausage, cooked
  • 2 ounces pepperoni, cut into bite-size pieces
  • 1 bell pepper, diced
  • 1 yellow onion, diced
  • 2-ounce can sliced olives, drained
  • 1 tbsp Italian seasoning
  • 2 tsp garlic, minced
  • 1 (28 ounces) jar pasta/marinara sauce
  • ½ cup water
  • 2-3 cups beef broth
  • 2 (8 ounces) packages cream cheese, cubed
  • 1 cup mozzarella cheese, shredded
  • Parsley

Directions:

Step 1

in a pan, cook 1 pound of sausages until it turns brown and cooked through, then drain the excess grease if there’s any. Once the sausages are ready, add them at the bottom of the crockpot, followed by pepperoni which was cut into smaller bite-sized pieces, add in the bell peppers, onions, olives, Italian seasoning, minced garlic, and pasta sauce. Add water to the jar of the pasta sauce to get any leftover, shake it well and pour it in the crockpot, pour in the beef broth as well. Stir all the ingredients together until well combined.

Step 2

Slice the cream cheese into cubes and place them on top of the soup ingredients but do not mix it in. Place the lid on the crockpot and cook it on a high setting for about 2 to 3 hours or on a low setting for about 4 to 6 hours, stirring occasionally. Once done cooking, remove the lid and stir the cream cheese in until incorporated and melted into the soup. Serve garnished with mozzarella cheese and parsley.
