This crockpot Italian sloppy joes recipe shared with us by Skinnytaste on YouTube is made with Italian chicken or turkey sausages, tomatoes, peppers, and onions perfectly cooked in the slow cooker—an excellent recipe for an easy weeknight meal.

Ingredients:

  • 1 lb Italian turkey or chicken sausage, removed from casing
  • 1/2 cup chopped onions
  • 3 cloves garlic, minced
  • 1 red bell pepper, chopped in 1/2-inch pieces
  • 1 yellow bell pepper, chopped in 1/2-inch pieces
  • 1 1/3 cups crushed tomatoes, Tuttorosso
  • 1/2 teaspoon dried rosemary
  • kosher salt and fresh black pepper, to taste

To serve:

  • 6 1-inch-thick slices Italian Bread, from 1 large loaf (2 oz each)
  • olive oil spray
  • dried Italian seasoning or Parsley, to taste
  • 2 tbsp grated cheese
  • garlic clove, cut in half
  • 1 cup shredded mozzarella or provolone cheese

Directions:

Prepare all the needed ingredients as stated in the list above.

Cook the sausages over medium-high heat in a medium non-stick skillet. Break up the sausages into small bits as they cook, until cooked through, about 56 minutes. Add the chopped onions and minced garlic. Cook for 2 minutes while stirring.

Once cooked through, transfer it to the slow cooker. Add the chopped bell peppers, crushed tomatoes, rosemary, and freshly cracked pepper. Cover the slow cooker and cook for 4 hours on low heat.

To prepare the garlic bread slices, place 6 slices of the bread on a sheet pan. Then, spray some olive oil and sprinkle some Italian seasoning and parmesan cheese on each side.  Spray another thin layer of oil and broil about 6 inches from the heating element until the top of the bread turns golden brown. Make sure to keep an eye on the bread for 3-5 minutes.

When toasted, carefully remove the bread from the oven and rub a garlic clove over it.  Next, top each slice with ½ cup of the prepared meat and add a layer of shredded mozzarella about 2 ½ tbsp on each.

Repeat with the rest of the bread slices and place them back in the oven to bake for 1-2 minutes until the cheese has melted.
