Today’s featured recipe is a quick and easy-to-make meal that the whole family will love. Nothing beats a home-cooked meal that your loved ones can share after a long day at work, this offers different kinds and levels of comfort. But preparing hearty meals can sometimes take a long time to prepare, well not anymore with this method using a slow cooker or crockpot. Just toss all the ingredients in there at once, let it cook, and wait. That’s how easy it is, just like this recipe from Cooking With Claudia that I found on YouTube. This meal looks incredible and you can also taste it in just a few steps.

Ingredients:

  • 6 to 8 large Bone-in thighs
  • 1 large Onion, minced
  • 1 lb Baby potatoes
  • 2 tsp Oregano
  • Salt and pepper to taste
  • 2 tbs Olive oil
  • 2 tbs Lemon juice
  • 6 cloves Garlic, minced
  • 1/2 cup Honey
  • 1/3 cup Sweet chili sauce
  • 3 tbs Soy sauce
  • 1 tbs Brown sugar
  • 1 tbs Dijon mustard
  • 1 tbs Corn starch mixed with 2 tbs water

Directions:

Step 1

In your crockpot or slow cooker, place the chicken thighs inside then toss the chopped onions, red baby potatoes (you can use regular potatoes but make sure that you cut it into smaller pieces). Season it with oregano, salt, and pepper to taste, then drizzle it with olive oil and mix. Arrange the chicken so that the skin side is facing up.

Step 2

Prepare the sauce in a mixing bowl, combine the lemon juice, honey, sweet chili sauce, soy sauce, brown sugar, and Dijon mustard. Stir the sauce until it is fully combined, then pour it onto the chicken and let it cook for about 5-6 hours. Check the chicken and remove the excess oil if you like, add a cornstarch and water mixture to let the sauce thicken. Blow torch the skin of the chicken if you want a more browning effect.
