Ingredients:

  • 6 to 8 large pieces of bone-in chicken thighs
  • 1 large piece of onion, minced
  • 1 pound of red baby potatoes
  • 2 teaspoons of oregano
  • 2 teaspoons of salt or to taste
  • 1 teaspoon of black pepper or to taste
  • 2 tablespoons of olive oil
  • 2 tablespoons of lemon juice
  • 6 cloves of garlic, minced
  • ½ cup of honey
  • 1/3 cup of sweet chili sauce
  • 3 tablespoons of soy sauce
  • 1 tablespoon of brown sugar
  • 1 tablespoon of dijon mustard
  • 1 tablespoon of corn starch mixed with 2 tablespoons of water

Directions:

Step 1

You can use either your slow cooker or crockpot to make this delicious dish, you can also line it with a crockpot liner. Place your washed and cleaned chicken thighs. Then, add in the sliced large onion, red baby potatoes (you can add them as is or cut them up), oregano, salt, and black pepper. Drizzle about 2 tablespoons of olive oil, then toss everything together until they are well mixed and the chicken thighs are coated with the seasonings. Once done, arrange them with the chicken thighs on top and its skin side facing up.

Step 2

In a small or medium mixing bowl, mix the lemon juice, minced garlic, honey, sweet chili sauce, soy sauce, brown sugar, and dijon mustard until well combined. After mixing the sauce, pour it over the chicken thighs on the crockpot. Place the lid and cook them for about 4 to 6 hours over a high setting. Check it after 5 hours and if the sauce is a bit runny, pour in a mixture of cornstarch and water, this will give it a thicker consistency, but this step is optional and you can skip it if you’re good with a runny sauce. Close the lid back on the crockpot and finish cooking it. Serve and pair it with yellow rice.
