Heat some olive oil in a large pan over medium heat, then add the ground beef, diced onions, diced green bell pepper, and minced garlic. Saute everything until the veggies soften and the meat turns brown. Once done, transfer the mixture to your slow cooker, then add the cubed sweet potato, cubed Yukon potato, diced carrots, chopped celery, 2 cans of fire-roasted diced tomatoes, and 6 oz tomato paste. After this, pour 4 cups of low-sodium beef broth and season with 1 1/2 tbsp Italian seasoning, 1 tsp salt, and 1/2 tsp ground black pepper. Mix everything well.

Place the slow cooker’s lid, set it on high, and cook for five to six hours (or on low for eight to nine hours.) Stir in the chopped fresh green beans and kale when there is about an hour left of cooking time, then just continue cooking until everything is tender. Serve and enjoy!
