This crockpot cabbage soup is vegetarian-friendly that looks very hearty and filling. Also, the cabbage soup by HenryFordTv on YouTube has a variety of vegetables and I love soups that help me catch up on my nutrients. It’s a good way to stick to healthy eating resolutions, and get your vegetables all in one dish. Also, if you do prefer meat in this soup, you can still add whatever type of protein to the mix such as chopped sausage, chicken or ham. Crockpot soup recipes are so fun because you can let the crockpot do all the cooking if you’re having a busy day. Plus, I think it’s nice to cook soups in crockpots because all of the vegetables are nicely tender and flavors are mixed together in one.
First, chop and prepare all vegetables before making this soup because it requires a lot of dumping and mixing everything together.
Next, add in the chopped vegetables, seasonings and the rest of ingredients to the crockpot. Cover and cook on medium heat for 2 to 4 hours
Overall, it’s a healthy soup that is only 60 calories per serving. It will fill you up without leaving you to feel heavy afterwards. Although this is considered a cabbage soup, I would say this is a vegetable soup just because there are all kinds of vegetables mixed into this recipe. If I’m lacking vegetables and want a soup, I think this would be a great soup to make during the Fall time or when the weather gets cooler.
