Ingredients:

  • 3 tbsp butter
  • 1 tbsp vegetable oil
  • 1 large onion, peeled and diced
  • 1 1/2 lb chicken breasts, diced
  • 4 cloves of garlic, peeled and minced
  • 1 tsp minced ginger
  • 1 tsp salt
  • 1 1/2 tbsp garam masala
  • 1 tbsp curry powder
  • 1 tsp paprika
  • 1 tsp cinnamon
  • 1 cup chicken stock
  • 2 – 14 oz cans of chopped tomatoes
  • 2 tbsp tomato paste
  • 2 tsp sugar
  • 6 cardamom pods
  • 1/2 cup double cream
  • handful of chopped coriander, garnish

Directions:

Step 1

Preheat your crockpot to high. In a large pan, melt 3 tbsp butter with 1 tbsp vegetable oil, then add the diced onion and the diced chicken. Cook for five to six minutes or until the onions are translucent and the chicken is sealed. After this, add the minced garlic, 1 tsp minced ginger, 1 tsp salt, 1 1/2 tbsp garam masala, 1 tbsp curry powder, 1 tsp paprika, and 1 tsp cinnamon. Mix well.

Step 2

Next, pour 1 cup chicken stock, two cans (14 oz) of chopped tomatoes, 2 tbsp tomato paste, 2 tsp sugar, and six cardamom pods. Stir well, then transfer to your crockpot. Put on the lid and cook on high for four to five hours (or on low for six to eight hours.) After cooking, remove the cardamom pods and stir in 1/2 cup double cream. Stir and cook for another minute. Serve with some freshly chopped coriander.
