Ingredients:

  • 3 sweet potatoes
  • 2 & 1/2 cups of sunflower oil
  • 1/2 cup extra virgin olive oil
  • a dash of sweet smoked Spanish paprika
  • a dash of garlic powder
  • a pinch of salt
  • a handful of freshly chopped parsley

Directions:

Step 1

Scrub clean the three sweet potatoes under some cold running water. Pat each one completely dry. Now, cut them into vertical slices that are a quarter inch thick, then cut them into quarter-inch slices to end with your fries. Once you have cut all the sweet potatoes, transfer them to a bowl, and add some cold water about 1/2″ above the sweet potatoes. Let them sit for 30 minutes. After 30 minutes, drain the potatoes and rinse them under cold running water. Put them in a dishcloth, making sure they’re in a single flat layer, then pat them dry.

Step 2

Heat a deep pan over medium heat, then add 2 & 1/2 cups of sunflower oil and 1/2 cup of extra virgin olive oil. After heating for between eight to ten minutes, add the pieces of sweet potatoes to the pan. After about 15 minutes, the sweet potatoes should be perfectly cooked through so start removing them from the pan and transfer them to a wire rack. Once they all have been removed from the pan, raise the heat to medium-high heat and heat it for five to six minutes, then add the potatoes back in. Fry them again for ten minutes. After this, transfer them again to the wire rack, and let them sit for five minutes. Season them with salt, garlic powder, and sweet smoked Spanish paprika. Garnish with some freshly chopped parsley, then serve.
