Ingredients:

  • 2.65 lb thinly sliced pork belly
  • 1 tsp ground black pepper
  • 1 tsp sugar
  • 1 tsp garlic powder
  • 1.5 tbsp fish sauce
  • 1 tbsp vinegar

For the dipping sauce:

  • 1/2 cup vinegar
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp brown sugar
  • 1/2 tsp soy sauce
  • 3 tbsp water
  • some chopped red onions
  • red chillis

Directions:

Step 1

Combine 1 tsp black pepper, 1 tsp sugar, 1 tsp garlic powder, 1.5 tbsp fish sauce, and 1 tbsp vinegar. Mix well to combine, then pour it over the pork belly. Mix the pork belly with your hands, making sure they are well coated with the mixture. Next, place each pork belly slice on a rack, arranging them nicely. After this, sun dry or air dry them for at least two hours. While waiting, make the dipping sauce. In a bowl, combine 1/2 cup vinegar, 1 tsp salt, 1/2 tsp black pepper, 1 tsp brown sugar, 1/2 tsp soy sauce, 3 tbsp water some chopped red onions, and red chillis. Mix well to combine.

Step 2

After two hours, get the sundried pork bellies and cut each in half. Put enough cooking oil in a large pan and fry the pork bellies until golden brown and crispy over medium to high heat. Your pork belly chips are now ready to be served.
