Step 1
Sprinkle about half a teaspoon of salt in a pot of boiling water, give it a good stir then add the cauliflower pieces. Let it boil for 2-3 minutes then drain off the water. In a mixing bowl, prepare the batter mixture by combining the flour, cornflour, chili powder, salt, chili flakes, ginger paste, and garlic paste, whisk them together until incorporated. Gradually pour in the water while consistently whisking until smooth. Add in the boiled cauliflower and toss them around until well coated. Place a pan on a stove over medium heat, then heat up some oil, and fry the coated cauliflowers until golden brown. Transfer to a plate lined with paper towels to drain off excess oil.

Prepare a new and clean pan, then add a tablespoon of oil, and saute the ginger and garlic. Add in 2-3 pieces of green chili and continue frying them for about 30 seconds. Add the onion, then the green, yellow, and red bell peppers, give it a good mix. Now, you can add in the red chili sauce, tomato ketchup, soy sauce, vinegar, and salt to taste, mix them together until well combined. Pour in 2 tablespoons of water and let it cook for about 2 minutes. Then, pour the mixture of 3 tablespoons of water and 1 teaspoon of cornflour into the pan, and mix them until well combined. Put the fried cauliflower in the pan and cook them for 2 minutes, garnish with chopped spring onion and serve.
