Slice the skinless salmon into bite-sized cubes.
Season the salmon. Add old bay seasoning, garlic powder, onion powder, paprika, Italian seasoning, salt, and ground black pepper into a small bowl. Mix them then sprinkle them into the salmon bites. Coat them well on all sides.
In a big bowl, combine all-purpose flour, old bay seasoning, garlic powder, onion powder, paprika, Italian seasoning, salt, and ground black pepper. In a separate bowl, prepare the egg mixture. Add 2 eggs and 2 tablespoons of milk into the bowl. Whisk to combine.
Grab some seasoned nuggets, dip them into the egg mixture, shake the excess, and drop them into the seasoned flour. Coat them well on all sides and set them aside. Continue with the remaining nuggets.
Pour a generous amount of oil into a pan so that you can deep fry the salmon bites. Place over medium-high heat. Once hot, put the salmon bites and cook for 7 to 8 minutes until they are golden brown.
