Ingredients:

  • 3 tbsp butter, melted
  • 2 large russet potatoes, peeled
  • 1/2 tbsp garlic powder
  • 1 1/2 tsp kosher salt
  • 1/4 tsp ground black pepper
  • 1 pinch of cayenne pepper, or to taste
  • 1 tbsp olive oil
  • 1 tbsp all-purpose flour
  • 1/2 cup finely grated parmesan cheese

Directions:

Step 1

To start, grate your potatoes into some cold fresh water. After this, rinse off the starch from the potatoes. Fill up the bowl with cold water, then use your hands to swish it around. Do this one or twice or until the water looks clear. Once done, transfer the grated potatoes into a strainer and let them drain. Next, transfer them onto a clean kitchen towel and squeeze out as much water as you can. Once done, go ahead and transfer them to a large mixing bowl and start seasoning them. Add 1/2 tbsp garlic powder, 1 1/2 tsp kosher salt, 1/4 tsp ground black pepper, 1 pinch of cayenne pepper, 1 tbsp olive oil, 1 tbsp all-purpose flour, and 1/2 cup finely grated parmesan cheese. Mix well.

Step 2

Now, grease your muffin tray generously with some melted butter, then transfer the mixture into each cup. Once you filled all the muffin cups, go ahead and place them in a  450 degrees F oven and bake for 40 to 45 minutes or until golden brown. After baking, let them sit for five minutes before removing from the pan. Serve and enjoy!
