Tater tots surely bring a lot of good memories. This crispy deep-fried or oven-baked snack can be eaten on its own or served with a yummy dipping sauce – it’s the usual way to prepare them. Why not try something new? Upgrade them into these crispy loaded tater tots filled with sour cream, bacon bits, cheese, green onions, and sauteed onion. This recipe by Smokin’ & Grillin with AB is definitely on another level.
For the cheese sauce(optional):

Place the tater tots in your skillet and cook in the oven based on the package instructions. You can also deep fry them.
Place a pan over medium-high heat. Once the pan is hot, add the bacon pieces and cook until crispy. Remove the bacon and place it on a plate lined with a paper towel to remove excess grease.
In the same pan with bacon grease, add diced onions and saute until transparent. Once done, set aside.
In a bowl, combine 3 heaping tablespoons of sour cream and 2 tablespoons of sour cream with a whisk. Taste the mixture and make adjustments if needed. Add a little bit of chopped green onions.
Place back the onions over heat and cook until a little bit browned.
Make the cheese sauce (optional). In a pot, add 2 tablespoons of butter and 2 tablespoons of flour. Mix until combined. Pour 1 cup of milk while continuously mixing. Next, sprinkle the cheese. If it becomes too thick, add more milk. Add the creole seasoning and a little bit of salt. Taste and adjust if needed.
Remove the tater tots from the oven. Sprinkle with shredded cheese and bacon bits. Next, pour the sour cream and cheese sauce(optional) on top and sprinkle more cheese, chopped green onions, and sauteed onions. Serve and enjoy!
