Fill a bowl with water and add the grated potatoes and onion. Let them soak in the water for about 10 minutes.
After 10 minutes, strain the grated potatoes and onion well. Use your hand to press toward the strainer.
Place a non-stick pan over heat and add vegetable oil. Stir-fry the potato and onion mixture until softened. Transfer to a bowl.
Add a tablespoon of salt and 4 tablespoons of cornstarch. Mix until well combined.
Get a small bowl and fill it with the potato mixture. Press well and tight, then place the bowl right side down on the cutting board to remove. Repeat with the remaining mixture.
You can fry them right away but you can also shape them using a knife or your hands.
Place a pan over heat and fill it with about 1 inch of oil. Let it heat until it reaches 350F. Once you have the right oil temperature, add the hash browns and fry for 6 minutes. Flip and fry the other side for 4 minutes.
Once crispy, place in a cooling rack to drain the oil completely. It quickly gets soggy when there’s a lot of oil.
Make the cheese sauce. Add flour and butter to a clean pan over heat. Mix constantly on low heat until browned. Stir in the milk then add the cheese. Mix until melted. Transfer to a bowl.
Serve the hash browns with the sauce. Enjoy!
