To start, prep and cut the ingredients accordingly and set them aside. Next, transfer the steak strips into a bowl and add 2 tbsp cornstarch, 1/4 tsp salt, and 1/4 tsp black pepper. Toss it until the steak strips are fully coated. Heat 2 tbsp vegetable oil in a large wok or pan over high heat, then add the steak strips. Fry them until brown and crispy. Once done, remove from the pan and transfer to a bowl. Now, turn the heat down to medium, then another 2 tbsp vegetable oil into the pan.
Add the broccoli florets and sliced red bell pepper. Saute them for three minutes. After this, add the minced garlic and ginger, then stir-fry them all together for 30 seconds. Turn off the heat and transfer the veggies to the bowl with the steak strips. Now, make the sauce.
In a large bowl, add 6 tbsp fresh lime juice, 6 tbsp dark soy sauce, 6 tbsp caster sugar, and 1 finely chopped red chili. Stir together. Turn the heat back on to high heat, then add the sauce. Simmer for a few minutes until thickened, then add the egg noodles. Heat the noodles through, then add the veggies and streak strips. Add the chopped green onions, then stir fry all together for two to three minutes, tossing everything together constantly. Once done, transfer to serving bowls, then top with chili flakes, spring onions, and fresh chilies.
