Ever wondered why you should add buttermilk to fried chicken? Soaking chicken in buttermilk breaks down the proteins and tenderizes the meat. You should soak it for at least 4 hours, but if you have more time, you can leave it for 24 hours.
Aside from the marinade, make sure that your breading is perfectly seasoned. They are the secret to getting the best fried chicken!
In a mixing bowl, add 1 quart of buttermilk, 1 tablespoon of hot sauce, cayenne pepper, 1 teaspoon of garlic paste, 1 packet of sazon, adobo seasoning, salt, black pepper, and onion powder. Whisk to combine.
Drop the chicken into the marinade. Make sure they are completely submerged. Cover the bowl and place in the refrigerator for about 4 to 24 hours.
Make the breading. In a bowl, add 2 cups of all-purpose flour, 1/4 cup of cornstarch, 1 packet of sazon, salt, pepper, cayenne pepper, adobo seasoning, and onion powder. Mix until well combined using a fork.
After 4 hours or more, take the chicken from the buttermilk, drain the excess, and transfer it to the breading. Press the flour into the chicken. Do this 15 to 20 minutes before you fry your chicken. It allows the chicken to come to room temperature and helps it form a nice crust.
Heat a generous amount of oil in a pot at 350F. Slowly add the chicken to the hot oil. Make sure not to overcrowd the pan. Cook for 9 to 10 minutes or until it has a 175F internal temperature. Place on a wire rack to remove excess oil. Serve and enjoy!
