I discovered these crispy breakfast scallion pancakes from Helly’s Simple Recipe last weekend. It’s not your usual pancake, as these are savory and crunchy! The combination of cheese and scallions are surprisingly delicious. If you love salty and crispy food, you will definitely like this recipe.

Ingredients:

  • 6 1/2 tablespoons of water
  • 1/4 teaspoon of salt
  • 1 cup of flour
  • 1 oz of green onion
  • a pinch of baking soda
  • 1.8 oz of cheese
  • 1/4 cup of flour
  • 1/4 cup of cornstarch
  • 0.7 oz of butter (melted)
  • oil for frying

Instructions:

Step 1:

In a bowl, add 6 1/2 tablespoons of water and 1/4 teaspoon of salt, and 1 cup of flour. Mix, then use your hands to form it into a dough. Stop kneading when it no longer sticks to your hand. Cover it and let it rest for about 10 minutes.

Step 2:

Divide the dough into 4 pieces, then form each one into balls.

Step 3:

Chop the scallions and place them in s small bowl. Add a pinch of baking soda and mix.

Step 4:

In a different bowl, combine 1/4 cup of flour and 1/4 cup of cornstarch.

Step 5:

Sprinkle some of the flour and cornstarch mixture on your working surface. Get one of the balls and flatten it until it’s 7 inches in diameter using a rolling pin. Spread more of the mixture on top. Repeat the process for the remaining dough balls.

Step 6:

Stack all of the flattened dough and roll again until it becomes 11 inches in diameter. Remove each piece from the stack.

Step 7:

Spread the melted butter on the dough and sprinkle chopped scallions and cheese. First, fold the sides toward the center, then flatten. Next, spread more butter on the folded part, then fold the ends on top of each other to make it into a square. Repeat on the remaining dough.

Step 8:

Heat oil in a pan and fry the pancakes over medium heat for 2 minutes on each side until brown and crispy. Serve and enjoy!
