Step 1
In a mixing bowl, whisk the eggs, garlic, parsley, salt, and pepper until well combined. Add the chicken in, then rotate to coat each piece evenly. Cover the bowl with plastic wrap and let it marinate for at least 15 minutes or up to overnight. Once the chicken is ready to cook, mix the bread crumbs, Parmesan cheese, and garlic powder together in a separate bowl. Dredge each piece of marinated chicken into the breadcrumb mixture and coat both sides evenly. Place a large skillet pan on a stove over medium-high heat, add in some oil and let it heat up before frying the chicken pieces. Cook them for about 4-5 minutes on each side or until golden and crispy. Place the cooked chicken in an oven tray or baking dish lightly greased with a non-stick cooking oil spray, and set them aside while preparing the sauce.

Heat oil in a medium-sized pot or saucepan, saute the onion for about 3 minutes or until translucent, then add in the garlic, and let it cook for another 30 seconds until fragrant. Add in the tomato puree, salt and pepper to taste, Italian herbs, and sugar (optional), and give it a good stir before covering it with a lid. Let it simmer for about 8 minutes or until the sauce has thickened slightly. Top each piece of chicken breast with about 1/3 cup of sauce, then place 2-3 slices of mozzarella cheese and 2 tablespoons of parmesan cheese on top of it and then sprinkle with basil or parsley. Bake it in a preheated oven at 430°F for 15-20 minutes or until the cheese is bubbling and melted.
