Ingredients
- 1 pound country sausage
- 1 medium yellow onion (diced)
- 2 tablespoons of butter
- 4 cloves of minced garlic
- 4 cups of low-sodium chicken broth
- 2 cups half and half
- 2 pounds russet potatoes (diced)
- 1 cup of sour cream (plus more for topping)
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/2 cup shredded cheddar cheese (optional)
- 1 tablespoon of minced chives (optional)

Instructions
Step 1:
Place a large soup pot over medium heat. Once hot, add the sausage and cook until browned. Stir occasionally. Remove from the pot using a slotted spoon and set aside.
Step 2:
Turn the heat to medium-high. Add diced onion and saute for about 7 minutes until soft and translucent. Next, add the 2 tablespoons of butter and minced garlic. Stir until melted.
Step 3:
Slowly pour 4 cups of low-sodium chicken broth and 2 cups of half-and-half into the pot, then add the potatoes. Let it come to a simmer, then reduce the heat to medium-low. Continue cooking until potatoes are soft and tender for about 15 minutes. Use a fork to check if they are done.
Step 4:
Once the potatoes are done, gently mash the potatoes. Leave some chunks for some texture. Add 1 cup of sour cream and cooked sausage. Season with salt and pepper and mix well.
Step 5:
Ladle into a bowl, and serve it with chives, cheese, and a dollop of sour cream on top. Enjoy while warm!
