Homemade Ham and Potato Soup Ingredients
- 1 tablespoon of oil
- 2 large carrots (peeled and chopped)
- 1 medium onion (diced)
- 2 ribs celery (chopped)
- 1 teaspoon of salt
- 1 teaspoon of minced garlic
- 1 teaspoon of dried parsley
- 1/2 teaspoon of dried thyme
- 1/4 teaspoon of black pepper
- 4 cups of low-sodium chicken broth
- 2 pounds of russet or gold potatoes (peeled and chopped)
- 2 cups of cooked ham
- 1 ham bone
- 1/4 cup melted butter
- 3 tablespoons of all-purpose flour
- 1 1/2 cups of milk
- 1 cup shredded cheddar cheese

How to Make Creamy Ham and Potato Soup
Step 1:
Place a large soup pot over medium-high heat and add oil. Once the oil is hot, add carrots, onion, and celery. Saute until the onions are soft for about 4 to 5 minutes.
Step 2:
Add salt, garlic, parsley, thyme, and pepper, and cook for a minute.
Step 3:
Pour the chicken broth, then add the ham, ham bone, and potatoes. Deglaze the pot by scraping the bottom with a wooden spoon. Let it come to a simmer over medium-high heat, then turn the heat to medium-low. Cover and cook until the potatoes are fork-tender for about 10 minutes.
Step 4:
Thicken the milk. Add the butter in a medium bowl or large measuring cup. Make sure that there is some room at the top. Whisk in the flour, then whisk in the milk. Use a spatula to get the flour from the sides of the cup. Next, microwave it for 45 to 60-second intervals. Start with 60 then reduce as the milk gets thicker and closer to being done. Whisk every interval, until it has thickened. Make sure to keep an eye on it as the mixture will bubble up.
Step 5:
Once the potatoes are cooked, remove the ham bone and pull any meat from it. Add the meat back, followed by the thickened milk and cheddar cheese. Stir everything well. Top it with shredded cheese and green onions.
