For the garlic parm tenders:

Chop the top off the garlic, remove some of the skin, and place in aluminum foil. Drizzle some olive oil and sprinkle some salt and pepper. Wrap it tightly in the aluminum foil and place it in a 400-degree F oven for about 40 minutes.
Place the chicken tenders in a bowl and add some all-purpose seasonings (or salt, pepper, garlic, and onion powder), cajun seasoning, and cayenne pepper. Mix them all to coat the chicken. Next, add the buttermilk and mix. Place in the fridge.
In a bowl, mix 2 cups of all-purpose flour, cayenne pepper, all-purpose seasoning, and Sazon seasoning. Set it aside. In a different bowl, add half of the room-temperature butter to the melted butter. Give it a good mix then add the grated garlic, diced parsley, parmesan cheese, and all-purpose seasoning. Mix until well combined.
Cook the pasta based on the package instructions.
Fry the bacon strips over medium heat. Once done, remove the bacon and place it on a paper towel. In the same pan, saute the onions over medium-low for 3 to 4 minutes. Next, add the sundried tomatoes, roasted garlic, all-purpose flour, all-purpose seasoning, and red pepper flakes. Cook for 3 to 4 minutes. Then add the cream and bring it to a boil. Mix occasionally to make sure nothing gets stuck at the bottom. Once boiling, lower the heat, add the spinach and let it cook. Next, over medium-low, add heavy cream, bacon bits, and mozzarella cheese. Mix them all.
Add the pasta to the sauce and give it a good mix. Taste the sauce and adjust the seasoning if needed. Then turn off the heat and transfer to a plate.
From the buttermilk, put the chicken tenders into the seasoned flour. Make sure they are well coated and place them on a plate. Heat the oil over 350 degrees then drop the chicken tenders. Cook for 5 to 6 minutes or until golden brown. Then dip into garlic parm sauce. Cut into slices and place on top of your pasta.
