Ingredients:

  • 2 tbsp butter
  • 1 yellow onion, diced
  • 2 celery ribs, sliced
  • 2 carrots, peeled and sliced
  • 2 garlic cloves, minced
  • 3 tbsp all-purpose flour
  • 2 potatoes, peeled and diced
  • 4 cups of chicken broth
  • 6 boneless skinless chicken thighs
  • 2 cups broccoli florets
  • 1 cup green peas
  • 1/4 cup cream
  • salt and pepper to taste

Directions:

Step 1

Heat up your soup pot over medium-high heat, then add 2 tbsp butter. Once it melts, start adding the onion, celery, and carrots. (All chopped accordingly.) Cook them for about two to three minutes, stirring frequently. Just as soon as the veggies are nice and soft, add the minced garlic and continue cooking for another 30 seconds. Next, add 3 tbsp all-purpose flour and cook it while stirring it constantly for a minute, then add the potatoes and 4 cups of chicken broth. After this, go ahead and add the boneless chicken and thyme to the pot. Pop the lid on and bring it to a boil.

Step 2

Once the soup boils, reduce the heat to medium heat and let it cook for 10 to 15 minutes. After 15 minutes, open the pot and remove the chicken to quickly chop it to pieces before adding it back to the pot. After adding the chicken back, go ahead and add the broccoli florets and the green peas to the pot. Let these cook for another two to three minutes, then add the cream and season it with some salt and pepper to taste.
