What I love most about this recipe is that it only uses simple ingredients, and often already in our pantry. Whenever we are craving pasta and only have a couple of minutes to prepare, we make this chicken alfredo pasta as it’s ready in just 35 minutes.
This meal is already filling, but if you want side dishes, you can serve it with garlic bread, salad, green beans, sauteed spinach, or asparagus. Give this a try – I am sure you will love it!
Cook the pasta in a pot of salt water (4 quarts of water, 1 tablespoon of salt) according to package instructions. Once done, drain and set aside.
Slice the chicken into strips and season on all sides with salt and pepper. Place a skillet over medium/high heat and add 2 tablespoons of olive oil. Once hot, add the chicken and saute until lightly golden and cooked through for about 5 minutes. Transfer to a plate and cover to keep warm.
Add 1 tablespoon of olive oil and 1 tablespoon of butter to the same pan over medium/high heat. Add onion and saute until soft for about 3 minutes. Next, add sliced mushrooms and saute until soft for about 5 to 7 minutes. Stir it frequently. Add garlic and saute for about 30 seconds.
Pour half-n-half and let it simmer over medium/high heat for about 8 to 10 minutes or until the sauce starts to thicken.
Bring back the chicken to the pan, then add 1/4 cup of parsley, salt, and pepper. Mix until well combined. Make a taste test and adjust seasonings if needed.
Add the cooked pasta to the sauce and stir to combine. Let it heat for another minute until warm. Turn off the heat, and cover with the lid. Let it rest for about 10 to 15 minutes.
Stir well, then serve with parsley on top. Enjoy!
