This homemade creamy chicken and dumplings recipe by The Anthony Kitchen is the perfect comfort food to warm you up on cold days. Place a large pot over medium-high heat and add 2 tablespoons of olive oil. Add the sliced carrots, celery, and onion to the pot and saute for a few seconds. Put the lid over and cook the veggies for about 5 to 8 minutes, until the carrots are slightly soft.
Add the broth and bring it to a boil. Turn the heat to medium-low and let it simmer for about 15 minutes.
Add the shredded chicken to the pot.
Make the dumplings. In a bowl, add flour, baking powder, and 1 1/4 teaspoon of kosher salt. Whisk until well combined. Next, stir in the milk until completely incorporated. Knead gently with your hands, if needed.
Drop a heaping tablespoon of dough into the broth one at a time. Stir the dumplings then cover the pot. Let it simmer for about 20 minutes, or until no longer doughy in the center.
Pour the heavy cream and add 2 teaspoons of kosher salt and pepper. Allow it to cool for a while before serving. Enjoy!
