Ingredients:
For the Creamy Chicken
For the Biscuit
Directions:
Prepare all the ingredients as stated above.
Preheat a skillet pan over medium heat and add a quarter cup of oil and 3 tbsp of butter. Once the butter has melted down, sauté the diced half of an onion, chopped celery stick, and chopped medium-sized carrot. Add a pinch of salt to taste and combine with the sautéed vegetables. Sauté until the onions become translucent and the carrots are softened. Next, add 2 cloves of minced garlic and continue to sauté for another minute. Add in the sliced chicken breasts and cook.
Season the chicken by adding a combination of celery salt, onion salt, garlic powder, dried thyme, dried marjoram, and dried rosemary. Mix everything until the seasonings are evenly combined with the chicken. When the chickens are cooked, add 7 tbsp all-purpose flour and cook together with all the ingredients for about 1 minute.
After a minute, add 3 cups of the low-sodium chicken broth, a cup at a time, while stirring continuously. Add 1 cup of whole milk and simmer until the sauce thickens. While simmering, you can add 1 ½ cup of frozen peas.
Preheat the oven to 425F.
Combine 2 1/4 to 2 1/2 cups of self-rising flour and a pinch of salt for the biscuits. Then, add in 6 tbsp of unsalted butter and mix. Next, add 1 cup of buttermilk while stirring. Scoop 9 biscuit doughs from the mixture on top of the chicken pan skillet. Carefully place the pan in the oven to bake for 20 minutes or until the biscuits are done. When done baking, brush a tbsp of melted butter on top of the biscuits and garnish with freshly chopped parsley.
Serve and have fun!
