Ever tried putting avocado on your pasta? If you still haven’t, go ahead and give this recipe by Chili In a Pod a try. I’m telling you – it’s really good and healthy! This is called the creamy avocado spinach pasta, and it tastes amazing just how it looks.
Ingredients:
Pasta:
- 5 oz of pasta of your choice
- 1.5 liters of water
- 1 tablespoon of salt
- 3 teaspoons of oil
Avocado-spinach mixture:
- 1 medium avocado
- 2 cloves of garlic
- 1/4 cup of spinach
- 1/4cup of cilantro
- 3 tablespoons of extra virgin olive oil
- 1 tablespoon of lemon juice
- salt and pepper to taste
Others:
- 1 tablespoon of extra virgin olive oil
- 1 teaspoon of chopped garlic
- 1/4 cup of sliced red onions
- 1/4 cup of sweet corn
- 1/2 cup of halved cherry tomatoes
- salt and pepper to taste
- 1/2 teaspoon of Italian seasoning

Instructions:
Step 1:
Boil a large pot filled with water, and add a generous pinch of salt. Add pasta and cook according to package instructions. Once done, remove from heat and drain.
Step 2:
Make the avocado sauce. Add 1 medium avocado, 2 cloves of garlic, 3 tablespoons of extra virgin olive oil, 1/4 cup of spinach, 1/4 cup of cilantro, 1 tablespoon of lemon juice, salt, and pepper to a food processor. Blend until creamy, then set it aside.
Step 3:
Place a pan over heat and add one tablespoon of olive oil. Add 1 teaspoon of chopped garlic and 1/4 cup of sliced onions, and saute for a few seconds. Next, add the cooked pasta, 1/2 teaspoon of Italian seasoning, and salt and pepper.
Step 4:
Add the cherry tomatoes and sweet corn to the pan and saute for a few seconds. Once done, transfer the pasta to a bowl.
Step 5:
Transfer the avocado mixture to the pasta and toss until well incorporated.
Step 6:
Sprinkle chili flakes on top and serve the pasta immediately. This pasta is best served right away or within 2 to 3 hours if refrigerated (to prevent decolorization).
