Ingredients:

  • 4 oz cream cheese, softened
  • 1 tbsp salted butter, softened
  • 4 cups powdered sugar
  • 1/2 tsp peppermint extract
  • 1/8 tsp vanilla extract
  • food coloring (optional)

Directions:

Step 1

Add the softened cream cheese to the bowl of your stand mixer along with 1 tbsp softened salted butter. Cream them together until they’re nicely combined, then gradually add the powdered sugar.  Once you have about half of your powdered sugar, pause mixing, and scrape the sides of your bowl. Continue mixing, then add 1/8 tsp vanilla extract and 1/2 tsp peppermint extract just before you finish adding all of the powdered sugar.

Step 2

Once done, divide your dough into two different bowls, and add the food coloring of your choice (optional). After this, scoop the cream cheese mints into about 1 tsp size portions and roll them between your palms. Place them on a parchment paper-lined baking sheet. Once done, press each cream cheese mint with the tines of a fork. Now, leave them to harden in your fridge for a couple of hours. Serve and enjoy!
